Utah's pizza scene is better than outsiders expect, mostly because it isn't trying to be one thing. Here's the spread — New York slices, Detroit squares, wood-fired 12-inchers and a brewpub pie — and where each one lives.

Frankie's Pizza and Pasta

Slackwater Pizzeria

A family-owned wood-fired pizzeria on Midvale's historic Main Street.

Twelve-inch wood-fired pies — Mushroom Ricotta, Mexican Street Corn — with gluten-free crust and vegan cheese available. The patio and rooftop host live music and events, so it functions as a community gathering spot more than a takeout counter.

Detroit-style square pizza from an Austin, Texas-founded pizzeria with several Utah locations.

The pies bake in heavy steel pans styled after Detroit auto-parts trays, which is what produces the focaccia-like crumb and the caramelized cheese edge. If you've never had real Detroit-style, start here.
